How to Make Quick Bread in a Bottle

Cool weather puts us in the mood to bake. So why not give a friend a head start? Layer the dry ingredients from step 1 (below) for this easy quick bread into a milk bottle or 1-quart mason jar. To fit, tamp each layer well (with chips and nuts on top). Then all that's left is to add the wet ingredients and bake.

We used craft paper adhered with double-stick tape to cover the original milk bottle graphics and the lid.

Add a label on the back of the bottle for the recipe instructions. The mix keeps for two to three months at room temperature.

Chocolate Chip Oatmeal Quick Bread

1. In a large bowl, mix the contents of this bottle: 2 cups all-purpose flour, 1 cup rolled oats, 1/2 cup granulated sugar, 1/2 cup brown sugar, 2 teaspoons baking powder, 1 teaspoon baking soda, 1/2 teaspoon cinnamon, 1/2 teaspoon salt, 1/2 cup chopped walnuts, and 1/2 cup miniature chocolate chips.

2. In a small bowl, beat 1 1/2 cups buttermilk, 2 large eggs, and 1/4 cup melted butter.

3. Stir wet mixture into dry ingredients just until evenly moistened (batter will be lumpy).

4. Scrape into a buttered and floured 9- by 5-inch loaf pan (with a 9-cup capacity), and bake in a 350° oven until a wooden skewer inserted in the center comes out clean, about 50 minutes.

We used bottles from milk we bought in an independent food market, which is a good source for milk from small, local dairies. If you don't have access to milk sold that way, or you're planning to make many of the bread gifts, you can use quart-size canning jars.

2. Kale: According to Dr. Joel Fuhrman, kale is the most nutritious food, loaded with minerals, vitamins, fiber and amino acids, as well as important antioxidants that reduce inflammation and can prevent cancer. It's also delicious and an easy to prepare, versatile food.

3. Hemp Seeds: What do you get when you combine protein, fiber, essential fatty acids, antioxidants, amino acids, vitamins and minerals? Hemp, of course. This easily digestible seed is versatile, easy to use and extremely tasty, too.

4. Chocolate: Yes, you read right. Cacao beans are so nutrient-dense that scientists haven't even begun to identify all the benefits in the little bean yet. Don't grab a Snickers though—the good stuff is found only in raw cacao beans or nibs (or really, really dark chocolate). Minerals, vitamins and tons of antioxidants are great for your heart, skin, and release chemicals in the brain that make you feel like you're in love.

5. Broccoli: Mom was right, you should eat your broccoli if you want a healthy digestive system and to decrease your risk of cancer. Broccoli has a wide range of yumminess too, from soups and stews to stir fry.

6. Spinach: Popeye was onto something with that spinach fixation. But skip the canned stuff and stick with fresh or frozen for an antioxidant, protein and fiber-rich burst of healthy goodness. Fresh or cooked, spinach's sweet and hardy flavor brightens any meal.

7. Chia: The Aztec warriors may have died out, but their legacy is alive and strong in the chia seed. This yummy, unassuming ancient favorite is loaded with omega fats, protein and fiber. Dr. Weil says it's a better choice than flax because "chia is so rich in antioxidants that the seeds don't deteriorate and can be stored for long periods without becoming rancid."

8. Berries: Unlike other fruit, berries tend to be less sugary and full of vital vitamins, minerals and those free-radical avenging antioxidants. Wild berries are always a great choice, especially black raspberries.

What do you know about the nutritional and healing qualities of raw cacao?


File:Theobroma cacao fruit, Botanical Garden, Hamburg IMG 1548 edit.jpgChocolate has been promoted by health experts for years as having health benefits.  Studies conducted on people who consume chocolate vs. those who do not showed a much lower instance of illness for those who consumed chocolate regularly.  In fact, a Dutch study indicated that the more chocolate eaten, the better for health.  Now, consider the fact that when you process chocolate, you destroy much of the nutritional value that was originally within the unprocessed beans.  Heating chocolate causes the omega 6 fatty acids present to go rancid and cause inflammation.  If you eat raw unheated cacao, there are a scope of advantages over eating a processed chocolate bar.  Bad associations with chocolate are due to health problems which are usually caused by other ingredients that are added to chocolate candy.  Sugar, milk, and other fillers cause cavities and weigh gain.  Raw cacao also has loads more antioxidant power than processed chocolate and helps regulate blood sugar which is a big plus for people who have diabetes.  Dark chocolate antioxidants have been shown to even dissolve the plaque that is deposited on the inside of blood vessels which reverses heart disease and also lowers blood pressure.
